According to the Miguel Hernandez University Researchers, clove has the highest antioxidant content out of all the commonly used spices. It is found that cloves contain high levels of phenolic compounds. cloves showed the highest capacity to give off hydrogen out of the five antioxidant properties tested. It reduced lipid peroxidation [the main reasons for foods deteriorating] to a great extent and was the best iron reducer.
Scientists say the most food industries add antioxidant in food products to prevent them from deteriorating, thus increasing its shelf life considerably. However, most of the antioxidants used by these food giants are synthetic and the chemicals in them have potential toxicity and adverse side-effects. These researchers hence encourage the use of natural spices, which have the same properties and are much safer and healthier. This spice is indeed nice.
